The last day of Cook Like a Boss. We’ve been so spoilt all week, eating like kings.
Today is Fakeaway Friday and the menu is honey chilli chicken with fluffy rice, and chocolate fondant with ice cream for dessert.
A fakeaway is best enjoyed in the evening time, and because Little Miss Nine is at her best in the mornings, we decided that it would be better if she made her chocolate fondants early in the day, and prepare all her ingredients for the honey chilli chicken. That’s what she did and it all worked out perfectly. The preparation is more than half the work for this fakeaway meal.
She made the chocolate fondants first. Very easy for a child to make. Miss Nine often made rice krispie buns so melting the chocolate and butter over a bain-marie wasn’t new to her.
As that was melting, she whisked the egg and sugar. She was in a very giddy mood today so I’m glad todays recipe wasn’t too tricky.

Once the chocolate and butter was melted she added the beaten egg and sugar. Then added the flour one third at a time. More mixing. She loves stirring stuff.

While the fondants were baking, Miss Nine got on to preparing her ingredients for the honey chilli chicken.
Out came the big knife. Even though she has come on in leaps and bounds since the beginning of the week, I held my breath once or twice as I watched her slice through the chicken.

The glaze was very straightforward to prepare. Whisk together sweet chilli sauce, light soy sauce, water, lemon juice and honey.

She put everything to one side until Fakeaway time!
By then it was only a matter of cooking the chicken and the glaze. Oh…and the rice.

I interfered a little bit today. I don’t trust my oven and I insisted that the chocolate fondants should bake for a wee bit longer…like 10 minutes(ish) longer. I know, I know!
But I’ve never had chocolate fondant. The testing skewer was just too gooey when Miss Nine took them out of the oven after the recommended time of 12 minutes. However…they tasted divine, even if they did look more like cake than fondant. I think I may be banished from my own kitchen. Oops!

I think I have to hand over my Queen of the Kitchen title to Little Miss Nine. She was a wee gem the whole week.

To be honest, I thought we would’ve been dragging her into the kitchen by day 3, because I thought the novelty would have worn off by then.
Different children are cut out for different things. I think it’s good for them to try a variety of activities so that they can discover their talents.
I know not everyone likes cooking, but I do think it’s a skill that can be learned and definitely something everyone needs. You never know when you’ll need to cook for yourself! And really…who wants beans on toast every day?
Little Miss Nine’s big sister, who is 27 this month, always had a keen interest in helping me in the kitchen when she was a child. When she went to college and shared a house with a few other students, she was the only one of them who could cook a meal from scratch. She’s a fabulous cook now, and I can’t wait until she can visit us again (go away covid). She’s very proud of her little sister and I’d let the two of them loose in my kitchen any time!
So thank you very much Chef Jeffers for all your classes this week. Thank you Fiona Lavelle for all your encouragement and emails. And to the team for all the hard work behind the scenes. Thank you to our neighbour Seán who told us about the cookery camp in the first place.
And thank you to our friends who have encouraged Little Miss Nine with all the likes and comments on Facebook, Twitter and the blog.

She’s a great wee woman and what a great idea to enlighten kids at a young age to get involved and learn great life skills. Also to liven the palette and become excited about food. Whenever we’re allowed over to Mayo 🙏🏽 Little Miss 9 can put on her chefs hat and we’ll enjoy her endeavors. Please God it happens 😁😁😁 Have a great relaxing weekend xxx
