Little Miss Nine is delighted with so many likes and comments she got on Facebook and the blog yesterday. So thank you all! You can read yesterday’s post HERE if you missed it.
Motivation today is still at 10 and Stephano is drooling at the thoughts of chicken chowder for dinner. Chef Jeffers from Forestside Cookery School is teaching Little Miss Nine how to cook chicken chowder with sweet potato and corn, and cheesy cornbread. Perfect for a cold day like today!
Cheesy Cornbread: We didn’t have muffin trays so we used a baking tin for the cornbread. This was very easy to make. We didn’t have any polenta or cornmeal so we used plain flour. Little Miss Nine mixed the flour with baking powder. To this she added 2 eggs beaten with buttermilk and honey. (We lost one egg during this)

She sautéed a chopped shallot and some chilli, and added some spinach and sweetcorn. She added this to her bowl of flour and egg mixture. This was much easier to mix than yesterdays dough. She poured it into the tray and baked for 30 minutes at 200c. 10 minutes before end of cooking time, she sprinkled with grated cheddar cheese.

Chicken Chowder: Stephano gets nervous when his wee girl uses a sharp knife. I noticed how much better she was today at chopping. Very confident! The vegetable peeler was a little tricky. Easy enough with the carrot but the sweet potato was more challenging. Even I struggle to peel a sweet potato; they’re lumpy and quite hard. Fair play to her though, she persevered. (Stephano left the building)


A lot of cutting and chopping for this dish. Little Miss Nine wasn’t too keen on cutting the chicken, but she did it. Stephano arrived back…he was getting hungry!

Little Miss Nine coated her chicken in flour, cooked for a few minutes in hot oil with shallots, garlic and celery. Then she added diced carrot, sweet potato and stock. At this point she said to me, “I feel like a real chef.”

Gently simmered for 10 minutes. Then she added milk and simmered for a further 10 minutes. Then finished off by adding chopped scallions, corn and some deliciously fragrant coriander. Next to basil, coriander is my favourite herb.

The chicken chowder and the cheesy cornbread turned out wonderful. All the different flavours in the chowder really came together, and the cornbread was really filling. Possibly the most adventurous dinner we’ve had on a Tuesday!

This is making me hungry – I am just getting a chance to read all about Day 2!! This looks simply delicious!! Perfect for a stormy day….warm the soul!! We won’t even mention the apron as that was yesterday’s news hehe 🙂 Bet the smells in the house were gorgeous!! Little Miss Nine….you have my vote (and I didn’t get to taste any of it hehe) 😉 PS how is Chef Stephano behaving after Monday’s incident? Keep your eye on him…

😆 We’ve actually just reheated the left overs of the cheesy corn bread and it was just as delicious as yesterday.
Stephano stood further back today! He was a good boy! 😄
